I don’t always love cooking, but I do like eating good food so I have been forced to learn how to cook somewhat over the years. I also worked in the restaurant business for eight years, so I was exposed to a lot of different foods, very well prepared.
#1 – Alaskan King Crab Legs – Alaskan King Crab Legs are a true delicatessen. They are quite expensive, especially if they are fresh where I live, but are so amazingly good. They are quite simple to cook as well if you have a large pot to steam them in. Served with some melted butter and perhaps some parsley for a little color on the plate and you are in for a real treat.

#2 – Porterhouse Steak – It is hard to beat a good Porterhouse Steak cooked medium rare with some fresh grilled onions and grilled mushrooms as a garnish. Add in a twice-baked potato and some fresh veggies and you have the cowboy dinner from heaven.
#3 – Rock Lobster Tail – Rock Lobster similar to King Crab Legs is pretty pricey, but so darn good and also fairly easy to cook. For the larger Rock Lobster tails one could expect to pay close to $100 in a restaurant. At home, you can make the magic happen for about half that here in Southern California for a really nice lobster tail. As a former Red Lobster employee…the key to cooking these is to watch them closely in the oven or grill them. They are quite easy to overcook if not careful and that would be a shame, wouldn’t it?

#4 – Homemade Enchiladas – Homemade enchiladas are very versatile. They can be vegetarian or have a lot meat, but do require copious amounts of cheese. To be honest, I don’t like making these (but my girlfriend does) because they are kind of labor intensive for a weekend warrior, but they are so darn good!
#5 – Yellowtail Fish Tacos – Yellowtail is a prized gamefish in the ocean here in Southern California due to its excellent fighting ability and its delicious meat. The best Yellowtail I ever had was literally caught on the charter boat and served to the patrons. Yellowtail has a very sweet flavor to it, especially when fresh and is also commonly used in sushi, but can easily be made into fish tacos at home. I recommend pan-seared so the meat doesn’t get too dry.
